Chocolate Muffins with Bananas
This recipewas prepared for visiting my mom yesterday evening. Personally, 'Muffin' is not a my favorite item. However, baking it isquite easy and less time-consuming compared to other items. I used silicone muffin cups and madeleine frame.I added bananas changed dark-colored and I used rice flour instead of usual weak flour.(Anyway, I had to get rid of all kinds ofsleeping stuffs inmyrefrigerater becauseI am scheduled to move out next month.)The result was more than expected.
Ingredients
90 g butter ; room temperature melted
50 g dark chocolates ; chopped
200 g rice flour shifted
30 g unsweetened cocoa powder
15 g sweentened cocoa powder
60 g yellow sugar
1 tablespoon of baking powder
1/2 tablespoon of baking soda
2 eggs
120g milk
2 bananas
Preparation
Preheat the oven to 170 degrees Celsius.
Beat butter with yellow sugar in a large bowl with mixer until pale and fluffy, then add two eggs (1at a time).
Add the cocoa powder and whisk together with flour, baking soda and powder.
Add the banana.
Add milk and mix well.
Divide batter among the muffin cups and madeleine frame.
Bake about 25 minutes.( in case of madeleine frame for 15 minutes)
Completely cool.
