Castella with sweetened Citron

I got this idea of recipe from one of the favorite cooking sites in Korea.

I heard the 'Catella' is a form of Japanese style sponge cake, so it's not different from usual baking method of sponge cake.

Ingredients

8 eggs, separated egg yolks and whites

100 g sweetened citron(유자청) insteadof lemon extracts

100 g yellow sugar

10 g rum

2 Ts milk

2 Ts honey

200 g(1 Cup) weak flour, shifted

Preparation

Preheat the oven until 170 degrees Celsius

In a large bowl, whisk 50 g sugar, egg yolks until getting yellow pale color (1)

Inanother small bowl, puthoney, milk and citron and thenmix well andwarm up (2)

Put the No.2 into No.1 and mix gently.

In another large bowl, beat the egg whites with electric mixer untilcomplete forming a foam, during beating put the remained sugar and mix well.

Mix all ingredients gently into No.1bowl not to break foam.

Pour batter carefullyinto pan and tap gently on the counter to remove air bubbles.

Bake until golden brown about 35 minutes ;10 minutes on 170 degrees Celsius and 25 minutes on 160 degrees Celsius


I let it cool completely during midnight



Slice it and enjoy !
