Seafood cooked in casserole ( 해물전골 ) 산낙지 4 마리 만원.우럭 세마리 만원.덤으로 준 바지락 과 미더덕.그리고 냉장고 야채들....풀무원 우동사리 , 떡국떡 약간..이만원으로 어제 저녁, 오늘 점심 두끼를 해물 전골로 해먹었다.* 매운 양념 ;고춧가루, 국간장 2 Tablespoons.다진 마늘 1 Ts.고추장 2 ts.생강가루, 다시마가루 약간 씩 멸치와 다시마로 국물을 우려내고,바지락과 미더덕을 먼저. 역시 해물은 재료가 싱싱해야 맛있다.우럭, 낙지가 모두 싱싱해서, 담백하고 쫄깃하다. 소고기, 버섯, 그리고 낙지 샤브샤브 원래 우리나라 요리는 아니라지만, 거의 토착화 된 한국요리가 아닐까 싶다.국물 만들기;멸치, 다시마, 건새우, 파, 건 다랑어포, 북어 조금...냉장고에 있는 모든 국물 재료를 총동원하고,끓으면 건져내고,버섯를 먼저 넣고 , 따로 간은 안해도 전혀 싱겁지않다. 땅콩 소스도 만들고.소고기도 준비. 근처 마트에서 4마리 만원하는 산낙지를 샀다.이모가 손질은 해주셨다.난, 아직도 살아 꿈틀거리는거는 싫다..... 김치찜 맛은 국물이 있는 김치 찌게와 비슷한데, 조금 더 은근한맛 ~얼마전 얻은 요리책을 뒤적이다가, 국물 좋아하는 큰애를 위해서 해보기로...준비; 너무 간단 , 익은 김치 1/4 포기, 돼지 고기 ( 냉장고에 있던 목살 300 g ) 김치 국물 1컵, 간장 1큰술, 다진 마늘 1큰술 ( 마늘 가루로 대체 ), 설탕 1/2, 약간의 올리브유 다시마 가루 약간 ( 국물을 따로 내기 귀찮아서.... 이게 cooking의 매력... 내맘대로 ) 어제 사다둔 떡살을 추가.냄비에 김치를 통째 넣고 센불에서 3분정도 끓이다가 불을 약하게 하고 은근히, 충분히 30분이상 끓여준다 ( 이게 포인트 !)원래 돼지고기는 따로 구운다음에 넣어야되는데, 그냥 넣고 푹 끓여줬다. 마지막에 떡살도 넣어주고 혹시나 돼지고기 비린내가 날.. 공감수 0 댓글수 0 2007. 12. 16.
